DESSERTS, BREAKFAST AND SUPPER

FRIED MARINADE DOGFISH

This is a typical dish from Andalucía and we LOVE it! Frying is not difficult, I am going to show you how to prepare authentic marinade, just delicious!

INGREDIENTS


- 1/2 kg dogfish with no bones and cut into cubes
- Thick salt 
- Orégano
- White wine vinegar
- Cumin
- Water
- Paprika
- 3 or 4 cloves of garlic
- 2 Bay leaves

STEPS

Put all the dices of fish in a bowl


Add:
a spoon of thick salt


A spoon of oregano 


Mash the cloves of garlic using a pestle and mortar 


Add them into the bowl 


Continue adding:
A spoon of paprika 


A tablespoon of cumin 


The bay leaves (broken into small pieces)


Measure one glass of water


Pour it into the bowl


Measure one glass of white wine vinegar


And pour it into the bowl with the rest of ingredients


Stir well. Leave the fish marinade during 24 hours.


The day after, soak the fish as much as possible

Cover it with wheat flour.

Prepare a pan with abundant sunflower oil. Once it is ready, fry it in every side.

CRANBERRY AND YOGURT SPONGECAKE


This spongecake is really good! Ideal for breakfast or tea. It is very easy to make, you don't need to use any electrical kitchen device!

INGREDIENTS



- 300 gr strong wheat flavour 
- 2 yogurts 
- 4 eggs
- 240 gr sugar
- 120 ml olive oil (you can measure this with the yogurt container once you empty it)
- One sachet of baking powder
- One bag of dry cranberries 

STEPS


Put the cranberries in a cup with warm water. We want to hydrate them during 10 minutes.


Put the eggs in a bowl


Measure 240 gr sugar


Add the sugar and beat everything till you obtain a whitish mixture.


Join the yogurts 



Measure the oil with the empty container of the yogurt and pour it into the bowl.




Mix everything to obtain a homogenous blend.


Measure 300 gr strong flour


The flour must be sieved before mixing with the rest of ingredients

Mix with the rest of ingredients 


The mixture must look like this:


Add the baking powder and a pinch of salt and blend all the ingredients.



Drain the cranberries and get them covered with flour. This will prevent that they fall to the bottom of the spongecake.



Add the cranberries to the mixture and distribute them carefully using a fish slice.


Grease a baking tray with butter


And then distribute some flour. By doping this, removing the spongecake from the mould will be easier


Pour the dough into a greased baking tray



Bake the spongecake during 45 minutes. The oven must be pre-heated at 180 degrees 


Check that the spongecake is ready using the toothpick trick (poke the cake, if the toothpick is clean when you take it out, the cake is cooked)


It is ready! Leave it cool



And enjoy it!!


HUNTER'S STYLE RICE

This a recipe my mum used to prepare some weekends or for special occasions. It is a rissotto with a really nice flavour that I am sure you will all enjoy! 

INGREDIENTS 

(These amounts serve 4 persons)


- 400 gr streaky bacon in fillets
- One tray of sliced mushrooms
- 2 glasses and a half of rice
- 5 glasses of water
- One chicken stock 
- One onion
- One clove of garlic
- Half glass of white wine
- Salt, ground black Pepper
- Thyme
- Olive Oil

STEPS
 
First of all we are going to prepare the stock. Measure five glasses of water


And pour them into a casserole 


Introduce the Chicken stock and heat till it starts boiling


Stir well and save for later

 
Now, prepare the ingredients:
Cut the streaky bacon into stripes 


Peel and chop the onion and the clove of garlic finely


Heat a pan with some olive oil (Im sorry about how this pan looks like! It is an old one that I exclusively use for rice and sauces)


Once the Olive oil is hot, put the onion and garlic into the pan and cook till they get brown


Now add the mushrooms and continue cooking 


When the mushrooms are soft, It is time to add the streaky bacon


Cook until the bacon changes its colour. Then, measure half glass of white wine


And pour It into the pan. Stir and wait till all the alcohol has evaporated 


 It's time to season! Use generous Thyme 


Salt and ground black pepper


 Stir well and add the rice


Once the rice has absorbed all the liquids from the pan, start adding the stock little by little using a serving soup spoon. Rice must absorb the stock before adding more


Stir at the same time 


Once you finish all the stock, cook for some more minutes and leave the rice settle for five minutes before serving 


You have Two serving options:

1.  Plain rissotto (directly from the pan)


2. Add some grated Parmesan or Grana Padano Cheese over your rice



Both options are delicious but I recommend number 2, rice is creamier and cheese provide a special flavour
