BOLOGNESE SAUCE (with Thermomix 3300)


This sauce is worth mentioning... it is just awesome, typical from a restaurant!! You can use it to prepare lasagne or cannelloni filling or to go with any kind of pasta.

INGREDIENTS

- 300 gr minced beef meat
- One small can of tomato puree (400 gr)
- Two carrots
- One Onion
- A clove of garlic (I forgot to put it on the photo)
- Two bay leaves
- One chicken stock
- Olive Oil
- Salt, ground black pepper, oregano


STEPS

Peel and cut the carrots into slices


Peel and cut the onion into pieces


Peel a clove of garlic and remove the middle sprout. This avoids us to have heavy digestion after eating.


Put the vegetables inside the Thermomix jar:
- The carrots


The garlic


The onion


Bay leaves


Two tablespoons of wheat flour


The chicken stock


Half small Thermomix cup of olive oil


The tomato puree


Close the Thermomix and use Speed 6 during some seconds to mix and grind all the ingredients


The mixture must look like this:


Now prepare the meat. Put inside the basket


Season it with salt, black ground pepper

and oregano


Place the basket inside the Thermomix jar


Cover the jar and place the strainer


Set the machine: Speed: 1, Heat: 100 degrees, Time: 15 minutes


Use the Thermomix special fish slice


to remove time by time the meat inside the basket


Once time is over, take the basket out of the jar. Be careful as it will be very hot.


Put the meat in a big bowl. Pour the tomato over it and mix it.


Our bolognese sauce is ready!

SQUID IN BLACK INK SAUCE (WITH Thermomix 3300)

Not enough time or too lazy to cook? Today machines can prepare the food for you! I serve this dish with boiled rice that can be easily done in the microwave

INGREDIENTS


- 500 gr squid rings
- 1 tomato
- 1 onion 
- 3 or 4 bay leaves 
- 2 bags of cuttlefish ink (can be found next to frozen fish at the supermarket)
- Some drops of Tabasco 
- Two small Thermomix cups of white wine 
- One small Thermomix cup of water
- One tablespoon of wheat flour
- Half small Thermomix cup of Olive oil 
- Salt, ground black Pepper

STEPS

Place all the squid rings (previously washed with cold water) inside the Thermomix basket. Season them with Salt and Pepper and save for later


Now cut the washed tomato into portions and put them inside the Thermomix jar.


Do the same with the onion 


Add the bay leaves


The measured Olive oil


The tablespoon of wheat flour


And the cuttlefish ink


Close the Thermomix and use Speed 1 during 5-8 seconds, open the jar again. It must look like this:


Pour some drops of Tabasco, Salt and Pepper


Place the basket with the squid rings 


Cover and close the jar. Place the strainer on top. Set the machine: Speed 1, temperature 100 degrees, time 20 minutes


5 minutes before the cooking program has finished, add the rest of the ingredients without removing the strainer 


First one small Thermomix cup of water


Then, two small Thermomix cups of white wine
Leave the Thermomix finishing cooking


Once time is over, open the Thermomix and be careful when handling the basket as it will be very hot. Place the squid in a tray and pour all the sauce all over them 


As I suggested before, they are perfect with some boiled rice as a side 


HOT CHOCOLATE (with Thermomix 3300)

A nice breakfast or snack, it goes perfect with "churros" or Three Kings' Cake. Using Thermomix we will have it ready in just a few minutes.

INGREDIENTS


- Special hot chocolate bar (chocolate a la taza)
- Milk
- Sugar
- Corn Flour
- Butter
- A pinch of Salt

STEPS

(These quantities are for two or three mugs of hot chocolate)
- Separate 12 squares of chocolate


Pour Milk into the Thermomix jar, until you cover the blades (350 ml approximately)


Wrap up the jar, place the strainer and set the machine:  speed; 1, temperature: 100 degrees, time:  1 minute. We want to warm the milk just a little


Now, remove the strainer and add the chocolate squares through the hole


Place the strainer again and use speed 1 during some seconds to crush the chocolate. As we have warm milk inside, it will be effortless for the machine


We add now:
- 250 ml milk 


One small Thermomix cup of sugar, and a pinch of salt 


A teaspoon of butter


A full teaspoon of corn flour


And set the machine: Speed 1, temperature 100 degrees, time: 7 minutes. When time is over, leave speed 1 during some minutes to cool the chocolate down
